Recipe: Sweet Potato Hash and Soy Sausage
This is a surprisingly delicious quick’n’easy recipe! This is a vegetarian version of a recipe found in the INSANITY: THE ASYLUM GET SHREDDED Plan. This recipe is based on sweet potatoes, need I say more. One difficulty in describing the health benefits of sweet potatoes is knowing where to begin. There are a surprising number of nutrient categories responsible for the health benefits of this underappreciated tuber. Among these categories are antioxidants, anti-inflammatory nutrients, and blood sugar-regulating nutrients. Each category brings with it valuable health benefits. This is a great way to start off the day! (By the way, this is based on the 1,800/2,100 calorie meal plan. For the 1,500 calorie meal plan, use 1 cup of sweet potato for a total of 329 calories.)
- 2 cups of cubed organic sweet potatoes
- 1/4 cup of diced organic onion
- 1/4 cup of diced organic red, yellow and green peppers
- 2 organic garlic cloves
- 2 MorningStar Farms Organic Sausage Patties (or other substitute for the added protein)
Spray a saute pan with a light layer of grapseed oil and place on medium-high heat. Add the sweet potatoes and brown. Add the onion, peppers and garlic and cook until tender. Microwave sausage patties. Serve with sweet potato hash. Makes 1 serving.
